Ingredients

  • 2 cups Whole milk
  • 0.5 cups Granulated sugar
  • 4 large Egg yolks
  • 3 tablespoons Cornstarch
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

In a medium saucepan, heat the milk over medium heat until it begins to steam, but do not let it boil. Stir occasionally to prevent scalding.

Step 2

In a mixing bowl, whisk together the sugar, egg yolks, cornstarch, and salt until smooth and well-combined.

Step 3

Slowly pour about 1/2 cup of the heated milk into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Step 4

Gradually add the tempered egg mixture back into the saucepan with the remaining milk, whisking continuously.

Step 5

Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble. This should take about 5-7 minutes.

Step 6

Once thickened, remove the saucepan from the heat and whisk in the unsalted butter and vanilla extract until fully incorporated and smooth.

Step 7

Pass the custard through a fine-mesh sieve into a clean bowl to remove any lumps for a silky texture.

Step 8

Cover the surface of the custard directly with plastic wrap to prevent a skin from forming and let it cool to room temperature.

Step 9

Refrigerate for at least 2 hours before using as a filling.
