  • 100 grams Unsalted butter
  • 50 grams Caster sugar
  • 175 grams All-purpose flour
  • 40 grams Custard powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 10 milliliters Whole milk
  • 50 grams Unsalted butter (for filling)
  • 25 grams Custard powder (for filling)
  • 100 grams Icing sugar
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, cream together 100 grams of unsalted butter and 50 grams of caster sugar until light and fluffy.

Step 3

In a separate bowl, sift together 175 grams of all-purpose flour, 40 grams of custard powder, 1 teaspoon of baking powder, and 0.5 teaspoon of salt.

Step 4

Gradually add the dry ingredients to the butter and sugar mixture, stirring well until a dough begins to form.

Stir in 10 milliliters of whole milk and bring the mixture together into a soft dough.

On a lightly floured surface, roll out the dough to about 5mm thickness. Use a round cookie cutter to cut out biscuits and place them on the prepared baking sheet.

While the biscuits cool, prepare the filling by beating together 50 grams of unsalted butter, 25 grams of custard powder, and 100 grams of icing sugar until smooth and creamy.

Add 0.5 teaspoon of vanilla extract to the filling mixture and beat until fully incorporated.

Once the biscuits are completely cool, sandwich them with roughly a teaspoon of custard filling in the middle.
