  • 250 g All-purpose flour
  • 170 g Unsalted butter (cold, cubed)

  • 2 pieces Egg yolks
  • 300 ml Whole milk
  • 100 ml Heavy cream
  • 75 g Granulated sugar (for custard)
  • 20 g Cornstarch
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 1 tsp Vanilla extract
  • 500 g Apples (peeled, cored, and thinly sliced)
  • 50 g Brown sugar
  • 1 tbsp Lemon juice

Directions

Step 1

Start by preparing the pie crust. In a large bowl, combine the all-purpose flour and granulated sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse breadcrumbs.

Step 2

Gradually add the cold water, 1 tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

While the dough chills, prepare the custard. In a medium saucepan, whisk together the egg yolks, granulated sugar (for custard), and cornstarch until smooth. Gradually whisk in the milk and heavy cream.
