Ingredients

  • 450 grams medium shrimp, peeled and deveined
  • 250 grams rotini or bow-tie pasta
  • 120 milliliters mayonnaise
  • 60 milliliters plain Greek yogurt
  • 2 teaspoons curry powder
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 0.5 red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, rinse with cold water, and set aside.

While the pasta cooks, heat a skillet over medium heat and add olive oil. Season the shrimp with salt and black pepper. Sauté the shrimp for 2-3 minutes per side or until they turn pink and are fully cooked. Remove from heat and set aside to cool.
