Ingredients

  • 2 tablespoons Butter
  • 1 small Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 teaspoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 tablespoon Tomato paste
  • 1 cup Coconut milk
  • 0.5 cup Heavy cream
  • 0.5 cup Chicken or vegetable stock
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 1 tablespoon Fresh cilantro, chopped (optional)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Add the finely chopped onion and minced garlic to the pan and sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

Step 3

Stir in the curry powder, ground cumin, and tomato paste. Cook for 1-2 minutes, allowing the spices to toast and the tomato paste to caramelize slightly.

Step 4

Slowly pour in the coconut milk, heavy cream, and chicken or vegetable stock, whisking well to combine all the ingredients into a smooth mixture.

Step 5

Add the honey and salt, and continue to cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Step 6

Taste and adjust the seasoning if needed. If desired, stir in the chopped cilantro for added freshness.

Step 7

Remove the sauce from heat and transfer to a serving bowl or fondue pot to keep warm.

Step 8

Serve alongside your favorite fondue items like cooked meat, roasted vegetables, or bread cubes. Enjoy!
