Ingredients

  • 2 sheets puff pastry sheets
  • 300 grams ground sausage (pork or chicken)
  • 1 medium, peeled and diced potato
  • 1 small, finely chopped onion
  • 1 small, finely diced carrot
  • 50 grams frozen peas
  • 2 teaspoons curry powder
  • 2 cloves, minced garlic
  • 1 teaspoon, grated ginger
  • 1 tablespoon soy sauce
  • 1 large, beaten (for egg wash) egg
  • 2 tablespoons vegetable oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion, garlic, and ginger, and sauté for 2-3 minutes until fragrant.

Step 3

Add the diced potato, carrot, and curry powder. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.

Step 4

Stir in the ground sausage and cook for 5 minutes, breaking it up with a wooden spoon, until browned and fully cooked.

Step 5

Add the frozen peas, soy sauce, salt, and black pepper. Mix well and cook for another 2 minutes. Remove from heat and let the filling cool completely.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 3 equal rectangles.

Step 7

Place a generous spoonful of the cooled sausage curry filling along one long edge of each rectangle, leaving space to fold the pastry over.

Step 8

Brush the edges with a little beaten egg, then fold the pastry over the filling to create a roll. Press the edges to seal and crimp with a fork.

Step 9

Place the sealed rolls seam-side down on the prepared baking tray. Brush the tops with the remaining egg wash.

Step 10

Using a sharp knife, cut small slashes on the top of each roll to allow steam to escape.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
