Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 2 medium Carrots
  • 1 small Red onion
  • 1 cup Mayonnaise
  • 0.5 cup Plain Greek yogurt
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 2 teaspoons Curry powder
  • 0.5 teaspoon Garam masala (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro (fresh, chopped)

Directions

Step 1

Thinly slice the green cabbage and red cabbage using a knife or mandoline. Transfer both to a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater, and finely slice the red onion. Add them to the bowl with the cabbage.

Step 3

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, curry powder, garam masala (if using), salt, and black pepper until smooth and well combined.

Step 4

Pour the dressing over the cabbage mixture. Using tongs or clean hands, toss everything together until the vegetables are evenly coated with the dressing.

Step 5

Sprinkle the chopped cilantro over the coleslaw and gently toss again to incorporate.

Step 6

Cover the bowl and refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld.

Step 7

Give the coleslaw one final toss before serving. Serve chilled or at room temperature as a side dish or topping.
