  • 1 lb boneless, skinless chicken thighs

  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 can (13.5 oz) coconut milk (full fat)
  • 0.5 cup chicken broth
  • 2 large peaches, fresh or canned, sliced
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 2 cups cooked basmati rice (optional, for serving)

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce heat to medium and add the chopped onion. Sauté for 3-4 minutes until softened and translucent.
