  • 1 lb chicken breast

  • 1 tsp paprika
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 12 oz penne pasta
  • 2 tbsp fresh cilantro
  • 1 lime

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain, toss with a small amount of olive oil to prevent sticking, and set aside.

While the pasta is cooking, dice the chicken breast into bite-sized pieces. Season with a pinch of salt and pepper.
