Ingredients

  • 500 g all-purpose flour
  • 10 g active dry yeast
  • 50 g sugar
  • 8 g salt
  • 250 ml milk, warmed
  • 50 g unsalted butter, melted
  • 1 egg, beaten
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 300 g ground beef
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 potato, small diced
  • 1 carrot, small diced
  • 100 g peas
  • 120 ml water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 egg, for egg wash

Directions

Step 1

In a large mixing bowl, combine flour, yeast, sugar, and salt. Mix well.

Step 2

Pour the warmed milk over the dry ingredients. Add melted butter and a beaten egg. Mix until a dough forms.

Step 3

Knead the dough on a lightly floured surface for about 8-10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5

While the dough is rising, prepare the filling. Heat vegetable oil in a pan over medium heat.

Step 6

Add chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.

Step 7

Add ground beef to the pan, stir until browned. Drain excess fat if necessary.

Step 8

Stir in curry powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant.

Step 9

Add diced potato, carrot, and peas. Pour in water, then season with salt and pepper.

Step 10

Cover and let it simmer for about 10-15 minutes until the vegetables are tender. Allow the filling to cool.

Step 11

Preheat the oven to 190°C (375°F). Line a baking tray with parchment paper.

Step 12

Punch down the risen dough, and divide it into 12 equal portions. Roll each portion into a ball.

Step 13

Flatten a dough ball, and place about 1-2 tablespoons of cooled filling in the center.

Step 14

Fold the dough around the filling, pinching the edges together to seal. Place the bun seam-side-down on the prepared tray.

Step 15

Repeat with the remaining dough and filling. Leave space between buns for rising.

Step 16

Cover the buns with a cloth and let rest for 15-20 minutes.

Step 17

Beat an egg for the egg wash, and brush it lightly over each bun.

Step 18

Bake in the preheated oven for 20-25 minutes or until golden brown.

Step 19

Cool on a wire rack before serving. Enjoy your delicious curry buns!
