Ingredients

  • 1.5 pounds beef stew meat
  • 1 large yellow onion
  • 3 medium carrots
  • 2 large potatoes

  • 1 teaspoon paprika
  • 1 can (13.5 ounces) coconut milk
  • 3 cups beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups (cooked) steamed rice
  • 2 tablespoons fresh cilantro (optional, for garnish)

Directions

Step 1

Cut the beef stew meat into 1-inch cubes if not already pre-cut. Season with salt and black pepper, and set aside.

Peel and dice the onion. Cut the carrots into 1-inch chunks and peel and cube the potatoes into bite-sized pieces. Mince the garlic and finely grate the ginger.

Heat a large pot or Dutch oven over medium-high heat and add the vegetable oil. Once hot, sear the beef in batches to brown all sides, about 2-3 minutes per batch. Remove and set aside.
