Ingredients

  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.25 teaspoon Cayenne pepper (optional)
  • 2 tablespoons Tomato paste
  • 1 can (13.5 oz) Coconut milk
  • 1 cup Beef broth or water
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 medium Potatoes, peeled and diced
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 4 cups Cooked rice (to serve)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Season the cubed beef with salt and pepper. Add the beef to the pot in batches, searing on all sides until browned. Remove the beef and set aside.

In the same pot, add the diced onion and sauté for about 5 minutes until soft and golden.
