Ingredients

  • 1 medium sweet potato
  • 1 large carrot
  • 1 medium zucchini
  • 2 cups spinach
  • 1.5 cups cooked chickpeas
  • 1 cup rolled oats
  • 1 small onion
  • 2 garlic cloves
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and cube the sweet potato. Grate the carrot and zucchini. Finely chop the onion and garlic.

Step 3

Steam or microwave the sweet potato cubes until soft, about 8–10 minutes.

In a food processor, pulse the cooked chickpeas until they are broken into small pieces but not fully pureed.
