Ingredients

  • 4 cups cooked turkey
  • 3 tablespoons butter
  • 1 medium yellow onion, diced

  • 3 tablespoons all-purpose flour
  • 2 cups chicken or turkey stock
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 3 cups cooked rice
  • 1 cup cheddar cheese, shredded
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set it aside.

Step 2

In a medium saucepan, melt the butter over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another 1 minute.

Stir in the curry powder and flour, cooking for 1 minute to eliminate the raw flour taste.
