  • 2 tbsp cornstarch

  • 1 carrot, julienned or thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tsp curry powder
  • 1 tsp ground turmeric
  • 1 cup unsweetened coconut milk (canned)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 2 tbsp fresh cilantro, chopped
  • 4 cups cooked rice or noodles (for serving)

Directions

Step 1

Drain the tofu and press it between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into 1-inch cubes.

In a small bowl, toss the tofu cubes with the cornstarch until evenly coated.

Heat 1 tablespoon of coconut oil in a large non-stick skillet or wok over medium-high heat. Add the tofu and cook for about 6-8 minutes, turning occasionally, until the tofu is golden and crispy on all sides. Remove the tofu from the skillet and set aside.
