Ingredients

  • 14 ounces firm tofu
  • 1 tablespoon curry powder
  • 0.33 cup vegan mayonnaise

  • 0.25 teaspoon black pepper
  • 1 celery stalk
  • 0.25 cup red onion
  • 2 tablespoons raisins
  • 2 tablespoons cilantro
  • 2 tablespoons sunflower seeds

Directions

Step 1

Press the tofu to remove excess water by wrapping it in a clean kitchen towel, placing it between two plates, and setting a heavy object on top for 10 minutes.

While the tofu is being pressed, finely dice the celery and red onion. Chop the cilantro and set aside.

In a medium mixing bowl, combine the curry powder, vegan mayonnaise, Dijon mustard, lemon juice, maple syrup, salt, and black pepper. Mix well to form the dressing.
