Ingredients

  • 6 Large eggs
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Yellow curry powder
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Chopped fresh cilantro (optional for garnish)

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with water. Bring the water to a boil over medium-high heat.

Step 2

Once the water is boiling, reduce the heat to low and let the eggs simmer for 8-10 minutes. Remove the eggs from the heat and transfer them to a bowl of ice water to cool for 5 minutes.

Step 3

Peel the cooled eggs carefully and slice them in half lengthwise. Scoop out the yolks and place them in a mixing bowl. Set the egg whites on a platter, cut side up.
