Ingredients

  • 400 g fresh spinach
  • 3 tbsp peanut butter (smooth or chunky)

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp red chili flakes (optional)
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 100 ml water

Directions

Step 1

Wash the spinach thoroughly and set it aside to drain.

Step 2

Peel and finely chop the onion. Mince the garlic and ginger.

Step 3

Heat the vegetable oil in a large skillet or saucepan over medium heat.

Add the chopped onion to the skillet and sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic, ginger, curry powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant, stirring frequently.
