Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 cup fresh pineapple, diced
  • 0.5 cup red bell pepper, finely chopped
  • 0.25 cup red onion, finely diced
  • 2 tablespoons cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeño, seeded and minced
  • 2 cups cooked rice, for serving

Directions

Step 1

Rinse and pat dry the shrimp with a paper towel. Set aside.

Step 2

In a small bowl, mix the curry powder, paprika, garlic powder, salt, and black pepper together.

Heat 1 tablespoon of olive oil over medium heat in a large skillet. Add the shrimp and sprinkle the spice mixture evenly over them. Toss to coat.

Cook the shrimp for 2-3 minutes per side, or until pink and cooked through. Remove from the skillet and keep warm.
