Ingredients

  • 1 lb Raw shrimp (peeled and deveined)
  • 1 cup Coconut milk (full fat)
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 tbsp Fresh ginger (grated)
  • 1.5 tbsp Curry powder
  • 0.5 tsp Ground turmeric
  • 0.5 tsp Paprika
  • 0.25 tsp Red chili flakes (optional)
  • 2 tbsp Vegetable oil
  • 2 tbsp Lime juice (freshly squeezed)
  • 0.5 tsp Salt

  • 0 Cooked rice or naan (optional, for serving)

Directions

Step 1

Heat the vegetable oil in a large skillet over medium heat.

Step 2

Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes, until fragrant.

Sprinkle the chopped cilantro over the top as a garnish just before serving.

Step 9

Serve hot with steamed rice or warm naan on the side for a complete meal.
