Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrot, finely diced
  • 1 pound ground lamb (or ground beef)
  • 1 cup frozen peas
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 2 pounds Russet potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced onion, garlic, and carrot. Sauté for 5-7 minutes until the vegetables soften.

Step 3

Add the ground lamb (or beef) to the skillet. Cook until browned, breaking it up with a wooden spoon, about 7-8 minutes.

Step 4

Stir in curry powder, cumin, and coriander. Cook for 1 minute until the spices are fragrant.

Step 5

Add tomato paste, beef or chicken broth, and Worcestershire sauce to the skillet. Stir well to combine. Reduce heat to low and simmer for 8-10 minutes, letting the flavors meld together.

Step 6

Stir in the frozen peas and cook for another 2 minutes. Season with salt and pepper to taste. Remove the skillet from heat.

Step 7

In a large pot, bring the peeled and chopped potatoes to a boil in lightly salted water. Cook until fork-tender, about 15-20 minutes.

Step 8

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Step 9

Transfer the meat mixture to a baking dish, spreading it out evenly. Top the mixture with the mashed potatoes, spreading them to cover the filling completely and smoothing the surface with a spatula.

Step 10

Place the baking dish in the oven and bake for 20-25 minutes, or until the top is golden and bubbly.

Step 11

Remove from the oven and let sit for 5 minutes before serving. Garnish with chopped cilantro if desired.
