Ingredients

  • 8 sausages
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 garlic cloves
  • 2 tablespoons curry powder
  • 2 tablespoons plain flour
  • 2 cups beef stock
  • 2 carrots
  • 1 cup frozen peas
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh coriander
  • 4 cups steamed rice

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 6-8 minutes. Remove from the skillet and set aside.

Step 2

Add the remaining tablespoon of olive oil to the skillet. Dice the onion and mince the garlic, then add them to the skillet. Cook for 3-4 minutes until the onion is translucent and fragrant.

Step 3

Stir in the curry powder and flour, cooking for 1-2 minutes until the mixture becomes fragrant.

Step 4

Gradually add the beef stock, stirring continuously to prevent lumps. Bring to a simmer and let it cook for 5 minutes to thicken slightly.

Peel and slice the carrots, then add them to the skillet. Return the sausages to the skillet as well. Cover and simmer on low heat for 20 minutes until the sausages are cooked through and the carrots are tender.
