Ingredients

  • 6 pieces sausages (pork, beef, or chicken)
  • 2 tablespoons olive oil

  • 3 cloves garlic cloves, minced
  • 2 medium carrots, peeled and sliced into rounds
  • 2 stalks celery stalks, sliced
  • 2 medium potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons tomato paste
  • 1 14-ounce can canned diced tomatoes
  • 1 14-ounce can canned cannellini beans, drained and rinsed
  • 1 14-ounce can canned red kidney beans, drained and rinsed
  • 3 cups chicken stock or vegetable stock
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, deep skillet or pot over medium heat.

Step 2

Cook the sausages for about 5-7 minutes, turning occasionally, until browned on all sides. Remove sausages from the pot and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the pot. Stir in the diced onion and cook for 3-4 minutes, until softened.

Step 4

Add the minced garlic, carrots, and celery to the pot, and sauté for another 3-4 minutes.

Step 5

Sprinkle in the curry powder, ground cumin, and paprika. Stir well to coat the vegetables in the spices, and cook for an additional 1-2 minutes until fragrant.

Stir in the tomato paste, then add the canned diced tomatoes and chicken or vegetable stock. Bring the mixture to a gentle simmer.

Return the sausages to the pot, along with the diced potatoes. Cover the pot with a lid and simmer for 20 minutes.

After 20 minutes, add the drained and rinsed cannellini beans and red kidney beans to the pot. Stir well and continue to simmer uncovered for another 15-20 minutes, or until the potatoes are tender and the sauce has thickened slightly.

Season with salt and black pepper to taste.

Step 10

Garnish the hot pot with freshly chopped parsley before serving. Serve warm with crusty bread or steamed rice.
