Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 cup raisins
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and simmer for 15-18 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes. Fluff it with a fork and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes, stirring frequently, until softened.

Step 4

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 5

Stir in the curry powder, ground turmeric, ground cumin, and salt. Toast the spices for 30 seconds, stirring constantly, to release their aromas.

Step 6

Add the cooked rice to the skillet and toss to coat evenly with the spice mixture.

Step 7

Stir in the raisins and cook for another 2-3 minutes, allowing the raisins to plump up and the flavors to meld.

Step 8

Remove from heat and stir in the chopped parsley and lemon juice for a fresh finish.

Step 9

Serve warm as a side dish or enjoy on its own. Garnish with extra parsley if desired.
