  • 1 cup Basmati rice
  • 2 cups Cauliflower florets
  • 1 cup Frozen peas

  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1 cup Coconut milk
  • 1 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro
  • 4 Lemon wedges

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

Step 2

Chop the onion finely, mince the garlic, and grate the ginger. Set aside.

Step 3

Heat the olive oil in a large pot or deep skillet over medium heat.

Step 4

Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Stir in the garlic, ginger, curry powder, turmeric, and cumin. Cook for another 1-2 minutes, stirring frequently, until the spices are fragrant.
