  • 3 cloves, minced garlic cloves
  • 2 medium, diced carrots
  • 2 medium, diced celery stalks
  • 1 medium, diced red bell pepper
  • 1 medium, diced zucchini
  • 6 cups vegetable broth
  • 1 cup canned coconut milk
  • 1 cup, uncooked brown rice
  • 1.5 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (or to taste) black pepper
  • 2 cups, fresh baby spinach
  • 0.25 cup, chopped (optional) fresh cilantro
  • 2 tablespoons (optional, for garnish) lime juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3–4 minutes until softened and translucent.

Step 3

Add the minced garlic, diced carrots, celery, and red bell pepper to the pot. Sauté for another 4–5 minutes, stirring occasionally.

Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for 25–30 minutes or until the rice is tender.

Once the rice is fully cooked, stir in the coconut milk. Adjust the seasoning with salt and black pepper to taste.

Step 8

Add the baby spinach and cook for an additional 2–3 minutes until wilted.
