Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 0.5 teaspoon salt
  • 1 medium carrot
  • 1 medium red bell pepper
  • 1 medium cucumber
  • 0.25 cup red onion
  • 0.25 cup cilantro
  • 0.25 cup raisins
  • 0.25 cup slivered almonds
  • 0.5 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 2 teaspoons honey
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Rinse the quinoa under cold water in a fine-mesh sieve to remove any bitterness.

Step 2

In a medium saucepan, bring 2 cups of water and 0.5 teaspoon of salt to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let the quinoa rest, covered, for 5 minutes before fluffing with a fork. Set aside to cool completely.
