  • 2 cups Vegetable broth
  • 1 medium head Cauliflower

  • 1.5 tablespoons Curry powder
  • 0.5 teaspoons Ground turmeric
  • 1 teaspoons Ground cumin
  • 1 teaspoons Coriander powder
  • 1 cup Coconut milk (full-fat or light)
  • 2 tablespoons Lemon juice
  • 0.25 cup, chopped Fresh cilantro
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into small florets and place them on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil, sprinkle with a pinch of salt and black pepper, and toss to coat. Roast in the preheated oven for 20-25 minutes, or until golden and tender, flipping halfway through.

Step 3

While the cauliflower roasts, rinse the quinoa under cold water in a fine mesh sieve to remove any bitterness. Combine the quinoa with the vegetable broth in a medium pot.
