Ingredients

  • 500 grams pumpkin
  • 400 grams kumera (sweet potato)
  • 150 grams bacon
  • 1 medium onion
  • 2 garlic cloves
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 liter chicken or vegetable stock
  • 400 milliliters coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro (optional, for garnish)

Directions

Step 1

Peel and dice the pumpkin and kumera into 2-3 cm cubes. Set aside.

Step 2

Finely chop the onion and garlic. Dice the bacon into small pieces.

Step 3

Heat the olive oil in a large soup pot over medium heat.

Add the bacon and cook until golden and crispy, about 5 minutes. Remove with a slotted spoon and set aside, leaving the bacon fat in the pot.

Add the chopped onion and garlic to the pot and sauté until softened, about 3-4 minutes.

Stir in the curry powder and ground cumin, cooking for 1 minute to release the spices' aroma.
