  • 500 grams pork shoulder (cut into bite-sized pieces)

  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin powder
  • 400 milliliters coconut milk
  • 200 milliliters chicken or vegetable broth
  • 400 grams diced tomatoes (canned)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups basmati or long-grain rice
  • 4 cups water
  • 2 tablespoons fresh cilantro (chopped, optional for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring 4 cups of water to a boil. Add the rice, reduce heat to low, cover, and cook for 15-18 minutes or until the water is absorbed and the rice is tender. Fluff with a fork and set aside.
