Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup coconut milk
  • 0.5 cup chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh cilantro, chopped
  • 4 pieces lime wedges

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and ground turmeric. Set aside to marinate for 10 minutes.

Step 2

In a small bowl, mix the curry powder, ground cumin, and paprika. Set aside.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes on each side, until golden brown. Remove the pork chops and set them aside.

In the same skillet, add the diced onion. Sauté for 3–4 minutes until softened, stirring frequently.
