Ingredients

  • 500 grams Pork tenderloin
  • 120 grams Plain yogurt
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Ground turmeric
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Fresh ginger, grated
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro leaves, chopped (optional for garnish)

Directions

Step 1

Trim any excess fat from the pork tenderloin and cut it into bite-sized cubes, about 1.5 inches each.

Step 2

In a medium mixing bowl, combine plain yogurt, curry powder, ground cumin, ground turmeric, minced garlic, grated ginger, lemon juice, salt, and black pepper. Mix well to create the marinade.

Step 3

Add the pork cubes to the marinade, ensuring each piece is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Step 4

Heat olive oil in a large skillet or frying pan over medium-high heat.

Step 5

Remove the pork cubes from the marinade, letting any excess drip off, and place them in the hot skillet in a single layer. Be careful not to overcrowd the pan; cook in batches if needed.

Step 6

Sear the pork bites for 2-3 minutes on each side or until they develop a golden-brown crust and are fully cooked through. The internal temperature should reach 145°F (63°C).

Step 7

Remove the cooked pork bites from the pan and transfer them to a serving plate. Repeat with remaining pork if cooking in batches.

Step 8

Garnish with freshly chopped cilantro if desired and serve hot. Enjoy as an appetizer or pair with rice, naan, or a fresh salad for a complete meal.
