  • 400 milliliters coconut milk
  • 250 milliliters chicken broth
  • 2 tablespoons vegetable oil
  • 2 medium baking potatoes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Trim any excess fat from the pork loin and cut it into small cubes, approximately 2-3 cm in size.

Peel and finely dice the onion, garlic, and ginger.
