Ingredients

  • 1 lb Boneless pork shoulder
  • 2 cups Butternut squash, peeled and diced
  • 1.5 cups Jasmine rice
  • 2 cups Chicken broth
  • 1 cup Coconut milk
  • 2 tablespoons Yellow curry powder
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 1 medium Onion, finely diced
  • 1 medium Carrot, sliced
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Cut the boneless pork shoulder into bite-sized pieces. Season with salt and black pepper and set aside.

Step 2

Turn on the rice cooker to the sauté or cook setting (if available). Add vegetable oil and let it heat for a minute.

Step 3

Add the diced onion, minced garlic, and grated ginger to the rice cooker. Sauté for 2-3 minutes until fragrant and softened.

Step 4

Add the pork pieces to the rice cooker. Cook for 5-7 minutes, stirring occasionally, until lightly browned on the outside.

Step 5

Stir in the yellow curry powder, coating the pork pieces and aromatics evenly with the spices.

Step 6

Add the diced butternut squash and sliced carrot. Stir to mix with the curry-coated pork.

Step 7

Add the jasmine rice to the rice cooker and stir to combine with the other ingredients.

Step 8

Pour in the chicken broth and coconut milk. Stir gently to ensure the liquid is evenly distributed.

Step 9

Close the lid of the rice cooker and set it to its regular cooking mode (as if cooking plain rice). Allow the mixture to cook until the rice cooker switches to the 'warm' setting, approximately 35-40 minutes.

Step 10

Once the cooking cycle completes, let the rice cooker rest on the 'warm' setting for 5-10 minutes to allow flavors to meld.

Step 11

Open the lid, fluff the rice gently with a fork, and mix to distribute the pork, squash, and carrots evenly.

Step 12

Serve hot, garnished with chopped fresh cilantro if desired.
