  • 1 tablespoon Curry powder
  • 3 tablespoons Unsweetened peanut butter
  • 1 cup Coconut milk
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 0.25 cup Peanuts, toasted and roughly chopped
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice, water, and salt. Bring to a boil, reduce the heat to low, cover, and simmer for 12-15 minutes, or until the rice is cooked and the water is absorbed. Fluff rice with a fork and set aside.

Step 2

In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
