  • 1 teaspoon fresh ginger, grated
  • 1.5 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 4 cups frozen green peas
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cilantro, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.

Step 4

Sprinkle in the curry powder and ground cumin, stirring to coat the onions and spices evenly.

Add the frozen green peas and vegetable broth to the pot. Stir well and bring to a boil.
