  • 1 teaspoon Apple cider vinegar
  • 1 medium Red bell pepper, diced
  • 2 Celery stalks, finely chopped
  • 3 Green onions, sliced
  • 50 grams Raisins or dried cranberries
  • 50 grams Slivered almonds or cashews, toasted
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 liter Water

Directions

Step 1

Fill a large pot with 1 liter of water, add a pinch of salt, and bring to a boil over medium-high heat.

Add the pasta to the boiling water and cook according to package instructions (usually 8–10 minutes) until al dente. Drain and rinse under cold water to cool. Set aside.
