Ingredients

  • 1 cup Raw cashews
  • 1 cup Raw almonds
  • 1 cup Raw pecans
  • 0.5 cup Raw pistachios
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Honey
  • 1.5 teaspoons Curry powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper for easy cleanup.

Step 2

In a medium saucepan over low heat, melt the unsalted butter and stir in the honey until combined and smooth.

Step 3

Remove the saucepan from heat and whisk in the curry powder, smoked paprika, ground cumin, garlic powder, salt, and black pepper. Mix well to form a spiced butter mixture.

Step 4

In a large mixing bowl, combine the cashews, almonds, pecans, and pistachios. Pour the spiced butter mixture over the nuts and toss thoroughly to coat evenly.

Step 5

Spread the seasoned nuts in a single layer on the prepared baking sheet, ensuring they’re not overlapping too much for even roasting.

Step 6

Bake the nuts in the preheated oven for 18–20 minutes, stirring halfway through to prevent burning. The nuts should be golden brown and aromatic.

Step 7

Remove the nuts from the oven and let them cool on the baking sheet for 10–15 minutes. They will crisp up as they cool.

Step 8

Transfer the cooled nuts to a serving bowl or an airtight container if storing. Garnish with freshly chopped cilantro if desired before serving.

Step 9

Store in a sealed container at room temperature for up to one week for optimal freshness.
