Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 units garlic cloves, minced
  • 500 grams ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 1.5 teaspoons curry powder
  • 0.25 teaspoon cayenne pepper (optional)
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 250 milliliters beef stock
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 300 grams macaroni pasta
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the finely chopped onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-6 minutes.

Step 5

Stir in the ground cumin, ground coriander, turmeric powder, curry powder, and cayenne pepper (if using). Cook for 1 minute to toast the spices.

Step 6

Mix in the tomato paste, canned diced tomatoes, and beef stock. Stir well to combine.

Step 7

Add the soy sauce, salt, and black pepper. Simmer the mixture over medium heat for 10-12 minutes, stirring occasionally.

Step 8

While the mince simmers, cook the macaroni pasta in a pot of salted boiling water according to package instructions. Drain and set aside.

Step 9

Once the sauce has thickened, stir the cooked macaroni into the mince mixture and toss to coat evenly.

Step 10

Taste and adjust seasoning if needed.

Step 11

Serve hot, garnished with chopped fresh cilantro, if desired.
