Ingredients

  • 1 large head Cauliflower florets
  • 2 tablespoons Unsalted butter
  • 3 small Shallots
  • 2 medium Garlic cloves
  • 1.5 teaspoons Curry powder
  • 0.5 teaspoons Ground turmeric
  • 0.25 cups Heavy cream
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 tablespoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Trim and separate the cauliflower into florets. Rinse thoroughly under cold water and set aside.

Step 2

Bring a large pot of salted water to a boil and add the cauliflower florets. Cook for 8-10 minutes, or until very tender. Drain and set aside.

Step 3

While the cauliflower cooks, thinly slice the shallots and mince the garlic. Set aside.

Step 4

In a large skillet over medium heat, melt 1 tablespoon of the butter. Add the sliced shallots and cook for 5-7 minutes, stirring frequently, until softened and golden brown. Add the minced garlic and cook for an additional minute, being careful not to burn it. Remove from heat and set aside.
