Ingredients

  • 500 grams Ground lamb
  • 0.5 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon, grated Ginger
  • 2 teaspoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Egg
  • 50 grams Breadcrumbs
  • 1 medium, sliced Zucchini
  • 1 medium, sliced Red bell pepper
  • 1 small, sliced Eggplant
  • 2 tablespoons Olive oil
  • 200 grams Plain yogurt
  • 2 tablespoons, finely chopped Fresh mint leaves
  • 0.25 medium, grated Cucumber
  • 0.5 teaspoon Ground coriander
  • 4 pieces Burger buns

Directions

Step 1

In a large mixing bowl, combine the ground lamb, onion, garlic, ginger, curry powder, ground cumin, salt, black pepper, egg, and breadcrumbs. Mix well until evenly combined. Divide the mixture into 4 portions and shape into burger patties. Set aside.

Step 2

Preheat the grill or a grill pan to medium-high heat.

Step 3

In a separate bowl, toss the sliced zucchini, red bell pepper, and eggplant with olive oil and a pinch of salt and pepper. Grill the vegetables for 3-4 minutes per side until tender and lightly charred. Remove from the grill and set aside.

Grill the lamb patties for about 4-5 minutes on each side or until fully cooked to an internal temperature of 71°C (160°F). Remove from the grill and let the patties rest for a few minutes.

Assemble the burgers: Place a grilled lamb patty on the bottom half of a toasted bun, followed by a generous spoonful of mint raita, grilled vegetables, and then the top half of the bun.
