Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 1 tablespoon, minced fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 1 14-ounce can canned diced tomatoes
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped (optional for garnish) fresh cilantro

Directions

Step 1

Heat a large skillet over medium heat. Add the vegetable oil and let it heat up for a few seconds.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Stir in the minced garlic and ginger, cooking for 1-2 minutes until fragrant.

Step 4

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned and cooked through. Drain any excess fat, if needed.

Step 5

Sprinkle the curry powder, ground cumin, ground coriander, cayenne pepper, salt, and black pepper over the beef. Stir well to coat the beef evenly with the spices.

Step 6

Pour in the canned diced tomatoes and their juices. Stir to combine, then bring the mixture to a simmer.

Step 7

Reduce the heat to low and stir in the coconut milk. Allow the curry to simmer gently for 10-12 minutes, stirring occasionally, until the sauce thickens slightly.

Step 8

Taste and adjust seasoning if needed. Add extra salt or spices as desired.

Step 9

Remove the skillet from heat and garnish the curried beef with fresh cilantro, if using.

Step 10

Serve hot over steamed rice, naan, or any flatbread of your choice. Enjoy!
