Ingredients

  • 2 large eggplant (aubergine)

  • 0.5 cup yogurt (plain, unsweetened)
  • 2 tablespoons, chopped fresh cilantro
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pierce the eggplants several times with a fork and place them on a baking sheet lined with parchment paper.

Roast the eggplants in the oven for 25–30 minutes, turning them once halfway, until the skin is charred and the flesh is soft.

Step 4

Remove the eggplants from the oven and let them cool slightly. Once cooled, slice them in half and scoop out the flesh, discarding the skin.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes, until translucent.
