Ingredients

  • 4 large Eggs
  • 3 tablespoons Mayonnaise
  • 2 tablespoons Plain Greek yogurt
  • 1 teaspoon Curry powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 stem Green onion
  • 1 stalk Celery
  • 8 slices Raisin bread
  • 2 tablespoons Butter or margarine
  • 4 pieces Lettuce leaves

Directions

Step 1

Place the eggs in a medium-sized pot and cover them with water. Bring the water to a boil over medium-high heat.

Step 2

Once boiling, lower the heat to a simmer and cook the eggs for 9-10 minutes. Remove the eggs from the pot and place them in a bowl of ice water to cool for 5 minutes.

Step 3

Peel the cooled eggs and roughly chop them. Place the chopped eggs in a mixing bowl.

Add the mayonnaise, Greek yogurt, curry powder, salt, and black pepper to the mixing bowl with the eggs. Mix thoroughly until the ingredients are evenly combined.
