  • 1 cup couscous
  • 1 cup chicken or vegetable broth

  • 1 pound shrimp, peeled and deveined
  • 1 medium red bell pepper, diced
  • 0.5 cup frozen peas, thawed
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

In a medium saucepan, bring the chicken or vegetable broth to a boil. Remove from heat, stir in the couscous, cover, and let sit for 5 minutes. Fluff with a fork and set aside.

In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the chopped onion and sauté for 3 minutes until softened. Add the minced garlic, curry powder, cumin, and paprika, and stir for 1 minute until fragrant.
