Ingredients

  • 1 can canned chickpeas, drained and rinsed
  • 1 cup diced tomatoes, canned or fresh
  • 2 cups spinach, chopped
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

In a medium saucepan, bring the water or vegetable broth to a boil. Remove from heat, stir in the couscous, cover with a lid, and let sit for 5 minutes. Fluff with a fork and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent.
