  • 6 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil

  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper (optional)
  • 14 ounces canned diced tomatoes
  • 1 cup coconut milk
  • 0.5 cup chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 tablespoon lemon juice

Directions

Step 1

Pat the chicken thighs dry with paper towels and season both sides with a pinch of salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-7 minutes until the skin is golden and crispy. Flip and cook the other side for 2-3 minutes. Remove the chicken and set aside.
