Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 3 cloves garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece red onion, chopped into large cubes
  • 2 pieces bell peppers, chopped into large cubes
  • 6 pieces wooden or metal skewers

Directions

Step 1

Cut the chicken breasts into 1.5-inch cubes and set aside.

Step 2

In a large bowl, combine Greek yogurt, curry powder, ground cumin, ground coriander, paprika, minced garlic, grated ginger, lemon juice, olive oil, salt, and black pepper. Mix well to form a marinade.

Step 3

Add the chicken cubes to the bowl with the marinade, ensuring all pieces are thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or up to overnight, for the best flavor.

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Step 5

Thread the marinated chicken cubes onto the skewers, alternating with pieces of red onion and bell peppers.

Step 6

Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

Step 7

Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 8

Remove the kebabs from the grill and let them rest for a couple of minutes before serving.

Step 9

Serve the Curried Chicken Kebabs hot with a side of rice, naan, or a crisp salad for a complete meal.
