Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 6 cups baby spinach
  • 4 ounces cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 4 cups cooked white or brown rice

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

Step 3

Reduce heat to medium and melt the butter in the same skillet. Add the chopped onion and sauté for 3-4 minutes until softened.

Step 4

Stir in the garlic and ginger, cooking for an additional 1 minute until fragrant.

Step 5

Add the curry powder and paprika, stirring constantly for 30 seconds to toast the spices.

Step 6

Pour in the chicken broth and use a wooden spoon to scrape up any browned bits on the bottom of the skillet. Bring the mixture to a simmer.

Step 7

Stir in the heavy cream and cream cheese, whisking until the sauce is smooth and creamy.

Step 8

Add the spinach to the sauce and cook for 2-3 minutes until wilted.

Step 9

Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken.

Step 10

Cover the skillet, reduce the heat to low, and simmer for 15-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 11

Garnish with fresh parsley and serve hot over cooked white or brown rice.
