Ingredients

  • 1 medium head Cauliflower
  • 1 large Onion
  • 3 cloves Garlic
  • 1 inch piece Ginger
  • 2 medium Tomatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 0.25 cup Water
  • 2 tablespoons Cilantro (fresh)

Directions

Step 1

Wash the cauliflower thoroughly and cut it into small florets.

Step 2

Chop the onion finely, mince the garlic, and grate the ginger.

Step 3

Dice the tomatoes and set them aside.

Step 4

Heat the vegetable oil in a large skillet or pan over medium heat.

Step 5

Add the cumin seeds to the hot oil and let them sizzle for 30 seconds until aromatic.

Step 6

Add the chopped onion and sauté until golden brown, about 5-6 minutes.

Step 7

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.

Step 8

Add the diced tomatoes and cook until they soften and break down, about 5 minutes.

Step 9

Stir in the turmeric powder, ground coriander, garam masala, red chili powder, and salt. Mix well.

Step 10

Add the cauliflower florets to the pan and toss to coat them evenly with the spice mixture.

Step 11

Pour in the water, cover the pan, and let the cauliflower cook for 10-12 minutes over low to medium heat, stirring occasionally. The cauliflower should become tender but not mushy.

Step 12

Uncover the pan and cook for an additional 2-3 minutes to allow any excess liquid to evaporate.

Step 13

Adjust the seasoning as needed and garnish with freshly chopped cilantro.

Step 14

Serve hot with basmati rice, naan, or any bread of your choice.
